Autumn is here and the days are colder, but no reason to stay at home and watch TV.
On the weekend, we enjoyed the dry autumn weather and spent the day outside. Our children 13, 11 and 9 were less enthusiastic at first.
Nevertheless, I packed my Campfire kitchen and got some ingredients for a few simple campfire dishes.
What do I take for my Campfire kitchen? Below is my list of the most important utensils:
We were looking for a comfortable place, for our campfire. As soon as the fire finally crackled, the children’s mood improved. They were eager to collect wood, carve sticks and help prepare the food. We all know, everything tastes better after a bit of physical activity.
If you are curious about the delicious campfire food, find below the recipes.
3 simple campfire recipes
Spicy lentil bowl

4 potatoes
4 carrots
5 tbsp. red lentils,
onion, garlic
organic vegetable soup seasoning
ginger
vegetable oil
homemade chili oil
salt, pepper, herbs as desired
Preparation
First finely cut onion and garlic, heat oil in a pan and sauté the onion and garlic. Then add diced potatoes and diced carrots and fry for a short time and add water. Now finely chop the Ginger and add it together with lentils and soup seasoning. Fill the pan with water until everything is covered. Now simmer over the fire until all the ingredients are done. Finally season with salt, pepper and herbs. For the spicy food lovers add the homemade chili oil.
Enjoy!
Personal tip: Refine with sour cream or homemade bannock bread.
Campfire Calzone
For the dough
water
flour
dry yeast
salt
sugar
2:1 flour:water, per 2 cups flour 1 pack dry yeast
For the Filling
cheese
ham
oil
tomato
oregano
salt
The dough
Mix flour, dry yeast, a pinch of salt and sugar with water and knead to a smooth dough. Be careful with the water, at the beginning, rather take less and add little by little. Cover the finished dough in a pot and put it in a warm (not too hot) place for ½ – 1 hour. When the outside temperature drops, keep it near the campfire.
The filling
Chop the tomato, season with salt and oregano and let it sit for a while. The cheese / ham mix I prepare already at home: just cut organic farm ham into small pieces and mix it with the grated mozzarella in the package or in a box.
Fill it
Knead the finished dough again and divide it into hand-sized pieces. Form round and flat pieces.
Tip: Always keep the hands and the surface well-floured.
Spread the tomatoes and the cheese / ham mixture on one the half of the dough pieces. Now fold it and press the edge well. Heat oil in a pan and bake the filled flatbreads, called Calzone on both sides slowly until crispy brown.
Buon Appetito!
Marshmallow butter biscuit sandwich
Ingredients
marshmallows
butter biscuits
wooden sticks for grilling
Preparation
A quick dessert, especially loved by kids, is my famous marshmallow butter biscuit sandwich. First find a few wooden sticks suitable for marshmallows. Toast the marshmallows until they are soft and turn brown. Take two butter biscuits (or any other large biscuits) and spread the marshmallow between the biscuits. Enjoy!
